The new restaurant in Mets is founded on a philosophy rooted in a love for creativity and tradition, respect for ingredients, and an appreciation of balance and human scale.
How is our sense of taste shaped? What defines our preferences and “taste aesthetics”? Humain’s philosophy is grounded in the power of experience—our earliest taste memories. These memories are forged through local ingredients, familiar childhood aromas, and the wisdom of Mediterranean tradition. They form the foundation upon which Christos Fotos, co-owner and executive chef of Humain, crafts a menu that is modern, authentic, and free of pretension.
The same philosophy has shaped the physical space of Humain. The neoclassical building on the corner of Archimidous and Agras streets in Mets embodies a distinctly “Athenian” aesthetic—one that has gradually faded over time. When Christos Fotos first saw the building, he instantly knew what he wanted to create there. The structure itself reflects Athens’ architectural heritage, encompassing evolution, disruption, and creativity. The interior, designed by Giorgos Gavalas and Yiannis Mourikis, evokes a cave-like ambiance with rich textures, dark tones, and natural materials. It is a space that is elegant, atmospheric, and effortlessly luxurious. Every detail, from the handcrafted ceramic dishes to the granite tables, is carefully curated to enhance the guest’s experience.
An essential part of the overall experience at Humain is the cocktail list, curated by Vassilis Sgouromallis. It takes an “out-of-the-box” approach, emphasizing fermentation and distillation. The goal is to give true meaning to the concept of “cocktail pairing,” complementing the dishes on the menu while also standing on its own for those who simply want to enjoy a well-crafted drink at the Humain bar.
As the Athenian summer unfolds and the nights grow sweeter, the spotlight shifts to Humain’s rooftop. This is more than just a roof garden—it is an urban oasis, shielded from the noise and bustle of the city. In this lush, green setting—surrounded by Mediterranean vegetation—guests can enjoy dinner under the Attic sky.
Humain is part of the Jul’s Group. The first Jul’s opened in Ibiza in 2018 with a focus on Greek cuisine, while the second is set to open in London in the fall of 2025. At the heart of the group’s identity lies an ever-evolving gastronomic concept that delivers unconventional flavors.
