Epicurean Tables: A New Gastronomic Dialogue at Ora by Ettore Botrini.

Ora by Ettore Botrini, located within the iconic One&Only Aesthesis, introduces Epicurean Tables, a new culinary concept featuring a series of exclusive dining experiences centered on creative collaborations between leading chefs from Greece and abroad.

Through these partnerships, the seaside restaurant in Glyfada—overlooking the Athenian Riviera and defined by interiors of understated elegance and warmth—creates a dynamic gastronomic dialogue where diverse cuisines, techniques, and philosophies converge around contemporary Greek gastronomy.

Epicurean Tables premieres on Friday, March 27, with a special four-hands dinner featuring Chef Ettore Botrini and Chef Dimitris Pamporis, marking the beginning of a monthly series of culinary encounters that will host distinguished Greek and international chefs.

Ettore Botrini, one of the most influential figures in modern Greek gastronomy, is renowned for his refined Mediterranean cuisine and deep respect for exceptional raw ingredients. Joining him is Dimitris Pamporis, Executive Chef of Ekies All Senses Resort in Halkidiki, a highly talented chef with nearly 15 years of experience, whose cuisine is defined by a strong connection to seasonality and locality, reinterpreting Greek flavors through a contemporary creative lens.

For this inaugural evening, the two chefs present a five-course tasting menu with wine pairing, showcasing modern Greek cuisine through technical precision, creativity, and outstanding ingredients.

The menu opens with red shrimp from Koilada, accompanied by citrus, turnip, Corfiot bitter orange salad, and chili pepper, paired with Orma, Bianco di Orma IGT Toscana – Vermentino. This is followed by Risi–Bisi with peas, cuttlefish, and mint, paired with Domaine Serge Daguenau, Pouilly-Fumé.

Next comes sea bass “Savore”, served with caramelized cauliflower, caper–raisin chutney, and black garlic with Assyrtiko marmalade, paired with Karamolegos Santorini Kouloura PDO – Assyrtiko, Athiri, Aidani. The main course features organic beef with chard, Metsovone cheese, mushrooms, and jus, paired with Megas Oinos – Agiorgitiko, Skouras Winery.

The experience concludes with a dark chocolate dessert accompanied by olive oil sorbet, offering a refined and balanced finish to the evening.

Epicurean Tables establishes a new gastronomic platform at One&Only Aesthesis, bringing together prominent chefs from the Greek and international culinary scene in the months ahead at Ora by Ettore Botrini, and presenting fresh culinary perspectives that highlight the richness of Greek ingredients through a contemporary Mediterranean lens.
